Apple rose pastries are everywhere right now, and for once I do jump on that wagon, but with my own version. As I’ve been working on a gluten- and dairy free recipe for cinnamon buns I thought I might as well combine the two things and make apple rose cinnamon buns. The result is yummy!
15 g yeast
5 dl cold water
Measure the yeast and water into a big bowl and mix well until the yeast has completely dissolved.
1 egg
70 g brown sugar
1,5 tbsp ground cardamom
Add the egg, sugar and spice to the liquid and mix well.
½ tsp salt
125 g wholegrain rice flour
30 g potato starch
175 g buckwheat flour
20 g psyllium powder
Measure the dry ingredients into a bowl.
Sift the flour mix into the liquid and mix together.
100 g coconut oil
Melt the coconut oil, if needed, and blend it into the dough until it is an even mass.
Cover the bowl with cling film and let the dough rest for 1.5 hours.
5-6 red apples
Cut the apples into halves and scoop out the centre.
Cut the halves into thin slices, starting from the top.
1/2 lemon
1 dl water
Add the apple slices into a bowl with the water and the lemon juice.
Steam the apple slices, for about 2 minutes until soft, then put them aside to cool off a little.
Rice flour
Place half of the dough onto a well floured work space and roll it in the loose flour until it is not sticky anymore.
Roll out the dough into a rectangular shape, about 30×50 cm, and cut 5 cm wide stripes.
3 tsp cinnamon
100 g brown sugar
Mix the cinnamon and sugar and spread half of the mixture over the dough stripes.
Lay out the soft apple slices onto the first strip of dough, placing the cut edge along the centre of the strip and the slices overlapping from the middle of the slices.
Roll up the roses starting from the side where you placed the apple slice and place into small paper tart forms.

Preheat the oven to 225° C
Repeat the same procedure with the second half of the dough.
Bake the cinnamon apple roses in the bottom half of the preheated oven for 20-30 minutes.
Icing sugar
Sprinkle some icing sugar over the apple roses before serving.
