This cabbage casserole is a typically Finnish casserole. I’ve added my own little twist with using my home made spruce shoot syrup.
(serves 4-6 persons)
1 pat of butter
1 chopped onion
400 g minced meat (everything goes: pork, beef, horse, lamb, moose, reindeer)
salt and peper
Heat a skillet.
Sauté the onion in the melted butter.
Add the minced meat, salt and pepper, and roast until all meat is cooked.
500 g chopped red and white cabbage
100 g brown rice
1 big carrot, grated
Add all ingredients into a bowl.
Add the fried onion and meat.
Mix together and putt all into a casserole form.
4 dl milk (if you use low fat meat replace 1 dl milk with cream)
4 dl water
1 egg
3-4 tbsp spruce shoot syrup (or dark molasses)
salt and pepper to your liking
Mix liquids and sesoning together and pour over the other ingredients in the casserole form.
Bake in preheated oven at 200°C for about 1 hour 15 minutes.
If you like, you can sprinkle some more spruce shoot syrup on the casserole and leave to rest in the turned off oven for another 15 minutes.
Lingonberries (fresh or frozen)
Sprinkle the lingonberries on the casserole on your plate and eat. Enjoy!
