Does your kid avoid eating greens, but loves chocolate? Well this is the perfect chocolate cake to fool your kid into eating vegetables! From my experience, this cake will be gone in seconds and children, also those who usually start running when they see vegetables, just love it.
150 g soft butter
200 g cane sugar
Mix together until it forms little tips.
3 eggs
Add to the sugar butter mix and whisk together until it is an even mass
100 g dark chocolate (min 50 % of cocoa)*
Melt the chocolate in a water bath
Add to the mass and mix well until it is an even brown batter
200 g grated zucchini
50 g ground almond
50 g chopped dark chocolate*
1 pinch of salt
Add the grated zucchini, ground almond and chopped chocolate pieces to the chocolate batter and mix well
150 g buckwheat flour*
1 tsp baking powder
1 tsp psyllium
Sift the flour, baking powder and psyllium into the bowl and fold them gently into the cake batter.
Pour the cake batter into a loaf tin lined with baking paper
Bake in preheated oven at 180 °C for 55 minutes
Remove the cooled down cake from the tin and paper and decorate to your liking.
*Make sure that the products you use are 100% gluten free.
