Cinnamon buns

There are so many memories linked with food and that means, there are big expectations when it comes to certain dishes or baked goods. Cinnamon buns fall into this category. I have so many happy memories which are triggered by the smell, texture and taste of cinnamon buns. So, no substitute will do, no sorry excuse of an allergy version. I want the smell, the texture and the taste of a real cinnamon bun. And here it is: My recipe for rich gluten free cinnamon buns which are pretty much like the real deal.

12 g yeast
5 dl cold milk

Measure the yeast and milk into a big bowl and mix well until the yeast has completely dissolved.

1 egg

Add the egg to the milk and mix well.

70 g brown sugar
½ tsp salt
125 g oat flour*
30 g potato starch
175 g buckwheat flour*
1 tbsp ground cardamom
20 g psyllium powder

Measure the dry ingredients into a bowl.
Sift the flour mix into the liquid and mix together.

100 g butter

Melt the butter and add blend it into the dough until it is an even mass.
Cover the bowl with cling film and let the dough rest for 1.5 hours.

100 g soft butter
3 tsp cinnamon
50 g brown sugar

Add the softened butter, cinnamon and sugar into a small bowl and mix it well.

Buckwheat flour

Pour the dough onto a well floured work space and roll it in the loose flour until it is not sticky anymore.
Sprinkle more flour onto the surface and roll out half of the the dough into a rectangular shape, about 30×50 cm.
Spread half of the cinnamon butter onto the dough until the whole surface is covered.
Roll up the dough starting from the long side of the rectangle.
Cut the dough roll into 10-12 pieces and place them side down into paper muffin cups.
Repeat same procedure with the other half of the dough.
Let the cinnamon buns rise for another 30 minutes.
Preheat the oven to 225° C

1 egg
Nib Sugar

Break the egg into a glass and blend until evenly yellow.
Brush the egg onto the cinnamon buns and sprinkle some nib sugar on top.
Bake the cinnamon buns in the bottom half of the preheated oven for15-20 minutes.
